Good morning! How was your weekend? Mine was nice and relaxing and relatively uneventful so this post should be short and sweet. 🙂
FRIDAY | I had the day off work to attend an event with Chicago Food Bloggers. I was lucky enough to be invited to the Chicago Auto Show’s First Look for Charity Media Preview and Tasting Event. We were able to meet with some of the chefs of the restaurants who will be providing the menu for this event in February. We got to sample some of the food that will be served and let me tell you, it is going to be top notch! I was given two tickets to attend the charity gala in February and I am so excited for that event. Be on the look out for a post about that next month.
Later that evening, Kevin and I went to Lou Malnati’s and had some personal gluten free pizzas for dinner.
We then walked next door to our local movie theater and saw Taken 3. It was actually a pretty decent movie with a couple unexpected twists.
SATURDAY | I made a two ingredient protein pancake for breakfast. Just mix together an egg and a 1/2 cup oats and cook like a regular pancake. Top with maple syrup – delicious!
I spent the rest of the day cleaning the condo and finally taking down the Christmas decorations. Later that evening, Kevin and I went to Eyrie for dinner. I had the most delicious Warm Kale and Quinoa Salad with Pulled Chicken, Goat Cheese, Kabocha Squash, and Pomegranate Vinaigrette and Reduction. Seriously so good!
SUNDAY | We had church in the morning and it was our Sunday to volunteer in the kids’ classroom. We had the 3-4 year olds today and had 27 kids in our class – yikes! Luckily there were two other volunteers in the room with us and all of the kids were well-behaved! I even made a new little friend who was attached to me the whole time which I didn’t mind one bit. 🙂
After church Kevin and I had brunch at Hutch – a newer restaurant in Lakeview. I had the Chilaquiles which were a little spicy but really good!
I spent the rest of the afternoon running a couple of errands and meal prepping for the week. We ended the night with the Golden Globes. Love Tina Fey and Amy Poehler!

I’m not a huge fan of deep dish pizza, but if I had to choose somewhere it would be Lou Malnati’s for sure! We like going there for the thin crust – their butter crust is the best!
