Happy Friday! I don’t know about you, but this week went by really fast and I am definitely not complaining! This weekend we have nothing going on which is actually a good thing because our condo desperately needs to be cleaned. It’s been far too long since I’ve paid attention to our floors and baseboards. I’ve even had to close the blinds a few days for fear of the sun shining in and exposing all of the dust lol. I think it’s supposed to rain on Sunday so that might be a perfect excuse to stay inside and clean. Whatever you are up to, I hope you have a great weekend!
ONE | A new lunch restaurant called Just Salad opened up last week right across the street from my office so I decided to check it out. As the name suggests, the restaurant serves just salad, ha! Well technically they have soups and smoothies too, but their main menu offers lots of different salad varieties or you can create your own. I tried a seasonal salad called the Spring Classic Crunch which had Romaine, Baby Spinach, Avocado, Snap Peas, Sliced Radishes, Grape Tomatoes, Parmesan, and came with a Strawberry Balsamic Vinaigrette. The salad was very tasty, but the restaurant itself was pretty hectic since it was the first week, but I think this will be a great lunch option in the future.
They are also having Smoothie Happy Hour during the month of April with all smoothies 50% off from 3-6 PM. I walked over one day and tried the Peanut Butter Chia Warrior which is a combination of Almond Milk, Banana, Peanut Butter, Chia Seeds, and Agave Nectar. It was delicious!!
TWO | For dinner one night this week I attempted to recreate the burger I had last weekend at Dryhop and it turned out great! I topped our burgers with Oven Roasted Tomatoes, Sauteed Balsamic Onions, White Cheddar, and Arugula. I served them with a side of Ina’s Parmesan Chive Smashed Potatoes from her Make It Ahead Cookbook. Yum!
THREE | Who’s excited for the Lilly Pulitzer for Target line to launch this Sunday?? I may have to take a break from cleaning and head over to snag some items for our upcoming Florida trip.
FOUR | Speaking of our upcoming trip, next week Kevin and I will be heading down to Key West for his cousin Ryan’s wedding. We are staying a few extra days after the wedding and are looking forward to a mini-vacay! This will be our first time visiting Key West and we have already received several suggestions of places to go/things to do but any other helpful tips are welcome for those of you who have been!
FIVE | I’ll leave you with you a funny Buzzfeed – 19 Emojis All Thirtysomethings Wish Existed. As I am closely approaching thirty, I found myself nodding my head in agreement with most of these. I especially loved the “Welp, I’m In For the Night” emoji:
