It’s been a while since I’ve done a What I Ate Wednesday post so I thought I’d share with you my day of eats from yesterday. After being gone on vacation, I’m finally getting back into a routine this week of meal prepping and it feels good to be eating clean again. Here is a look at my mostly Paleo day of eating yesterday. I apologize for the terrible pictures – most of my meals are eaten at my desk at work.
BREAKFAST | I really can’t bring myself to wake up any earlier than 6 AM before work so I always eat my breakfast at my desk usually around 8:15 AM once I get settled in. This week I’ve been eating hard-boiled eggs that I prepped on Sunday, half of a baked sweet potato, and some avocado. A good mix of protein, healthy fat and carbs.
I, of course, always stop for my iced green tea from Starbucks too. This week you earn two stars if you “leap the line” by placing a mobile order which I always do anyways so I am getting five bonus stars this week – win!
SNACK | I had a planning meeting at noon and knew I would be hungry for lunch in the middle of it so I snacked on a small banana with peanut butter during my meeting. Yesterday was National Peanut Butter Lovers Day so I felt like I was doing my part to celebrate. π
LUNCH | I ended up eating lunch around 1:30 at my desk. I heated up the other half of my sweet potato, some green beans, and a Trader Joe’s chicken sausage with mustard. My late lunch made the afternoon go by quickly since I leave work at 4 PM.
DINNER | I ate dinner around 6:30 last night. Usually we eat anywhere between 6:30 and 7:30 depending on the night. I had a homemade burrito bowl of sorts. I seasoned a chicken breast with some salt, chili powder, garlic powder, onion powder, cumin, and paprika and cooked in a little olive oil. I topped mine with some sauteed onion and peppers, salsa, and smashed avocado. Kevin ate his over rice. We honestly eat this meal at least once a week because it’s so easy and so good! I may have even gone back for seconds. π
That’s a look at my day of eats from yesterday. Everything was Paleo except for the peanut butter I ate with my banana. Like I’ve mentioned before, I try to follow a Paleo diet with the exception of legumes because I love beans and peanut butter too much! π

Paleo eats are yummy! It just takes more creativity. I love looking up Paleo recipes to make for my friends who have allergies. It’s pretty fun! And don’t worry about your pictures at all… You’re just keeping it real. π
