I love baked goods but don’t love the large amounts of sugar found in most recipes. There are so many ways to use natural ingredients to sweeten recipes and ripe bananas is one of them. This recipe not only is refined sugar free, it is also gluten free and Paleo friendly.
Coconut Flour Banana Muffins
recipe adapted via Wellness Mama
- 5 eggs
- 2 bananas
- ¼ cup coconut oil
- ½ cup coconut flour
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp cinnamon
- pinch of salt
- Preheat oven to 400 degrees.
- Pour all ingredients into a high speed blender (or use an immersion blender) and blend until smooth. Batter will be somewhat thick.
- Put into greased muffin tins.
- Bake for 13-18 minutes until lightly browned and set in middle.
