Lately, I have had little desire to come up with creative meal ideas and to actually cook in general. For the past few weeks, we’ve basically been eating the same meals of salads or rice/quinoa and veggie bowls – real original, I know! Lucky for me I married a guy who doesn’t ever complain about anything so he rolls with the punches even though I know he’d much rather be eating a burger (sorry Kev!). Here’s a peak at what my weekly eats have looked like lately.
{breakfast}
Usually a smoothie of some kind. Either a green smoothie or strawberry banana, always with a little peanut butter for protein and chia seeds for added nutrients and texture.
{snack}
I can’t get enough of avocados lately! My new favorite way to eat them is mashed up on a plain rice cake. So so good!
{lunch}
For lunch, I’ve just been bringing whatever is leftover from dinner the night before. It makes it easy for planning, that’s for sure!

Another thing I can’t seem to get enough of lately is hummus! I’ve been eating it non-stop with Nut Thins for an afternoon snack.

More veggies! And so glad I can start buying them from the Farmer’s Market again!

We’ve been eating huge bowls of watermelon every night after dinner – yum!

My cooking always seems to fall off in the summer! I did try a new recipe last night – Honey Lime Chicken Enchiladas. Not exactly healthy but sooo good!
