In keeping with the St. Patrick’s Day theme this week, I thought I would share another green recipe with you today. I love pesto because it’s so versatile and tastes good on just about anything. It’s great on pasta, sandwiches, meat, etc. Pesto is typically made with basil and pine nuts, but I thought I would change things up a little and make some using kale and almonds which are two ingredients I typically have on hand.
Kale Pesto

Ingredients
- 3 cups kale (about 1 small bunch)
- 3/4 cup almonds
- 1/4 cup apple cider vinegar
- 1/2 cup olive oil
- salt, to taste
Directions
- In a food processor or high speed blender combine the kale, almonds, vinegar, and olive oil.
- Pulse until pureed and well combined. Season with salt to taste.
