Good morning! How was your weekend? I had a pretty jam packed weekend but it was filled with lots of fun things.
{friday}
My friend Beth had her beautiful baby girl on Monday morning so I headed over to her house after work to meet Miss Clara. She is seriously the sweetest baby and didn’t make a peep the entire time I was there. She was awake and alert for most of my visit too. I was pretty impressed with how calm she was especially for only being four days old! It was great to catch up with Beth and meet her mom as well. I can’t wait to go back and see them again in a couple of weeks!
{saturday}
Saturday morning I woke up craving pancakes. Super random because I never eat/make pancakes! Luckily I had all of the ingredients on hand so whipped up a batch and enjoyed them while watching The Pioneer Woman.
Later that morning Kevin and I headed to the lake for the Chicago Air and Water Show. We set up our chairs on the beach for the day and enjoyed the show. It was really hot and sunny all day and I was not prepared and forgot to bring sunscreen. We definitely got a little burnt – oops!
Each year Kevin’s company is given a few tickets from Boeing to their tent for the show. Last year Kevin won the raffle so we got to watch the show from their tent with free food and drinks.
This year the Blue Angels were back in the lineup so I think the show was a bit more popular. We still had fun regardless of not being VIP, ha!
After the show was over we were pretty hungry so we walked to RJ Grunt’s for a late lunch/early dinner. Their cheeseburger is my favorite in Chicago!
Later that evening I met up with some girlfriends for a movie in the park. One of the parks was playing Frozen so we brought some snacks and enjoyed sitting outside chatting/watching the movie. Watching all of the little girls around us singing and dancing with the movie was almost more entertaining.
{sunday}
The weather on Sunday was completely different than what we experienced on Saturday. It was cloudy and cold all day long. The cityeventually cancelled the Air and Water Show for that day it was so foggy! We started the morning off by going to church and then had brunch outside at Marion Street Cheese Market. It was so chilly they had their heat lamps turned on their patio and I still had to wear a light jacket! I ordered a ham and cheese frittata and a nice warm cup of coffee.
After brunch I went grocery shopping and ran some errands while Kevin finished working on a paper he had due for school. Later that evening I made a loaf of gluten free banana bread which turned out great! I made oat flour by grinding gluten free oats in a food processor for this recipe.
I’m looking forward to a short week at work and spending this next weekend with my best girlfriends in Minneapolis!

Wow! What a great weekend! All of your food photos are making me so hungry! Those pancakes look great. I never made them before getting married but my hubby likes them so I’ve ventured out. Mmmm gluten free bread…yum. I’ve only tried making gluten free cookies but need to try more recipes!

I want to visit Chicago just for the food! That cheeseburger looks delicious! And I’d love to see an air show…so cool!
