Good morning! How was your weekend? We had some crazy weather here in Chicago. Saturday was the coldest October 4th recorded in history and it even snowed in some places. Yes, you read that correctly SNOW in October! I’m so not ready for that! Fortunately, those temperatures only lasted a day and Sunday was a beautiful day out. Here is what I was up to this weekend:
{friday}
After work I headed over to Crate and Barrel to pick up a gift for the wedding we went to on Saturday. Nothing like waiting until the last minute right? Michigan Avenue was all decorated for fall and I loved seeing how pretty it looked.
Kevin and I picked up pizza from Lou Malnati’s for dinner. They offer gluten free crust which is actually really delicious and just as good as the real thing! Green pepper and onion were my toppings of choice.
We also popped in Sugar Fixe Patisserie and grabbed some macarons (also gluten free) for dessert. We liked the lemon one the best.
We spent the night catching up on some of our weekly shows on the DVR.
{saturday}
I bundled up and ventured out to the store to pick up some ingredients to make apple cider donuts for breakfast. I made a gluten free version with a GF flour blend and they turned out great! Recipe coming soon.
Later in the afternoon we went to one of my co-worker’s wedding. Unfortunately do to the unforeseen temperatures, Lauren had to move her outside ceremony indoors, but it was still a beautiful wedding! Lauren looked gorgeous and we had such a fun time dancing the night away and celebrating with her and Jason.
{sunday}
We started our morning out at church where we heard a fantastic message on what it means to be a relentless community. Some of the takeaways I got from the sermon where that the reason God gives us community is because He knows we are sinners in need of grace. Unfortunately, too many of us have a consumerism mentality and have made our community our mission instead of the context of our mission. Jesus was not a consumer. He assumed all the costs on the cross so we can stop being consumers because He was consumed for us. This one hit me hard as I am definitely guilty of seeking what I can get out of church and community.
After church, Kevin headed home to watch the Bears game and I met up with some girlfriends from church for brunch at Kanela. I had a goat cheese, sun dried tomato, and arugula omelet – yum! It was great catching up with these girls and I am so glad we have gotten to know each other this year.
After brunch I made a Target run and then came home and made some homemade butternut squash soup! Be on the look for this recipe soon.
Have a great week!

Can’t wait for the soup recipe! Love the idea of pomegranate seeds as a topping! I have roasted the seeds as a topping in the past, it’s a fun way to add crunch!

Oh great idea to roast the seeds! I love roasted pumpkin seeds! I got the pomegranate seed idea from Rockit Bar because that’s how they served their squash soup.
