BBQ Pulled Pork topped Cornbread Waffles. Yes, you read that correctly. Every once in a while I get inspired to use my waffle iron to make things other than normal breakfast waffles. Cornbread is a traditional side served in most BBQ restaurants so I thought why not transform it into a waffle? Kevin and I both love all things BBQ and this pulled pork dish was a huge a hit with both of us.
This dish will certainly be a crowd pleaser at your upcoming Super Bowl parties! I dare you to try and only eat one. 😉
BBQ Pulled Pork
recipe adapted from Iowa Girl Eats
Ingredients
- 2 lb pork shoulder
- 1/2 cup barbeque sauce, plus more for serving (I used Sweet Baby Ray’s)
- Coke or Root Beer
- 1/2 onion, sliced
- Garlic powder
- Salt and pepper
Directions
- Season pork generously with garlic powder, salt, and pepper then place into crock pot.
- Add BBQ sauce and enough Coke to almost cover meat.
- Add sliced onion on top then cook on low for 8 hours, or until pork easily shreds.
- Discard cooking liquid then shred pork and mix with more BBQ sauce.
Honey Cornbread
recipe adapted from Iowa Girl Eats
Ingredients
- 1/4 cup butter, melted
- 1/4 cup unsweetened applesauce
- 1/4 cup sugar
- 1/4 cup honey
- 2 eggs
- 1 cup milk (I used 2%)
- 1 cup cornmeal
- 1 cup flour (can use gluten free)
- 1/2 tsp salt
- 1/2 tsp baking soda
Directions
- Plug in your waffle iron and spray well with nonstick spray.
- In a large bowl, whisk together melted butter and applesauce. Add sugar and honey then whisk to combine. Add eggs and milk then whisk to combine.
- In a separate bowl, stir together cornmeal, flour, salt, and baking soda. Whisk together wet and dry ingredients.
- Pour 1/3 to 1/2 cup mixture onto waffle iron and cook until done.
Note: You can also use a boxed cornbread mix such as Kruteaz or Jiffy to make the waffles.
Serve BBQ pulled pork over the cornbread waffles and top with coleslaw if desired.

Ok- now I need more things to make with my waffle maker. I have so many ideas spinning through my brain right now.
A couple weekends ago they did a segment on The Kitchen for different ways to use your waffle maker and they made hasbrowns and biscuits and gravy! I also want to try cinnamon rolls! So many possibilities!

Wow, what a delicious combo! I wouldn’t have thought to make cornbread waffles but that’s a great idea.
It was so easy and takes much less time than waiting for cornbread to bake in the oven!
